Premix for Sweet Pastries or Doughs with Citrus Flavor, Proson - 1 Kg

Premix in the form of a mold dedicated to the direct preparation of cozonacs, as well as a wide range of sweet yeast doughs, with or without added fat.

DOSE OF USE

The dosage is 5-20% depending on the final application. For example, for cozonac we recommend a dosage of 10% (relative to flour).

RECOMMENDED RECIPE

Cozonac recipe – no added fat

Flour type 480 or 550: 2000 g

Proson Frutti: 200 g

Sugar: 400g

Salt: 25 g

Yeast: 160-200

Water ~1000 ml

Working method:

Mix all the powdered ingredients beforehand for better homogenization. Crumble the Proson Frutti by hand and mix it with the powdered ingredients. Same goes for the yeast.

Mixing: 4 min. slow/6 min. fast (spiral mixer)

Dough temperature: 30-33° C

Dough resting: 15-20 min.

Dough division: to the desired weight

Pre-shaping: round

Dough pre-rising: 15-20 min.

Spread the sheet. Add filling as desired.

Final proofing: 45-60 min/32-35° C/70% RH

Baking: 175-180° C/40-45 min/no steam

If desired, fat and eggs can be added to the preparation of the cozonacs.

Each ingredient of this premix complies with EU Council Directives and FAO Food.

ALLERGENS
Contains: gluten, soy, milk.

STORAGE RECOMMENDATIONS
In dark, cool (max. 30° C) and dry spaces, with the original packaging closed, away from products with strong aromas.
