Royal Steensma Souplesse Cacao RSPO SG / UTZ MB

Flexible confectionery glaze for decorating and/or glazing all types of pastries, including chilled and frozen products. Ideal for glazing almonds or eclairs.

It can also be used to make mousse by mixing with whipped cream (high fat content, 32-36%)

Use :

  • for glazing It melts at a temperature of approximately 50 degrees C, depending on the thickness of the layer. It can be melted in the microwave, stirring occasionally, or in a bain-marie. After melting, it is applied at a temperature of 25-30 degrees C. Cool the product after decoration
  • for mousse mix with whipped cream 32-36% fat, in a ratio of 1 part icing / 3 parts whipped cream. The icing melts at a temperature of approximately 50 degrees C. The whipped cream is heated and mixed with the icing cooled to approximately 40-30 degrees. After After cooling or the next day, mix the mixture for about 5-6 minutes.
